Oh - and when you start eating them, take the top 1/3rd off both eggs at the same time, or the heat will continue to cook the second egg till you have finished the first...
My mum always used to say that an egg continues to cook after you've taken it out the water. So, bash them both on the head to break the shell when you take them out, then peel and slice the first, eat, then peel and slice the second, which will still be warm, but not hard.

The shell acts line a pressure cooker, so the answer to the OPs question is to crack the shells as you remove them from the pan.
