Eh, not my experience. VAG cars cut power if you try and brake with your foot already on the gas (most cars with drive-by-wire throttles do this). However, if you apply the brake first you can definitely blip the throttle in a heel-toe rev match.scherzkeks said:

My audi also lets me heel and toe but if I left foot brake it holds the brakes momentarily after I have released the pedal - not sure why? I don't really left foot brake anyway (unless karting ) so not a problem just strange!Tony
I can heel & toe in my Mk1 MX-5, but only just. The standard Momo stering wheel is rather large diameter, and my thighs are pretty big from playing football and mountain biking. There isn't much clearance for a proper heel and toe!

I found that the Audi A3s (same pedals) and 3 Series BMW with floor-hinged pedals I've driven were straight-forward enough to do it in. Are you actually trying to use your heel rather than the side of your foot to blip the accelerator?I used to do what OP described and was told not to by an instructor. By breaking then moving foot to throttle to blip and then back to brake and changing gear he described it as creating a rocking motion therefore destabilizing the car. If the foot pressure on the brake pedal is constant and the blip is done with the heal then this destabilizing is avoided. He reckoned it was only really any use for racing but I've since learned how to do it for pleasure and apply it on trackdays and on the road for fun. Bmw accelerator pedals lend themselves to this technique very nicely in my view.
