A good example is the big sportives like the ones you mention. Some absolute stmuncher riders finished with 25mph average in Ride London last year. Rolling along in a huge pack is quite taxing on the brain but it makes riding fast pretty easy, I remember doing a race as a fairly new 2nd cat with a fair few UK pro riders and averaging nearly 50kmph for 90 miles, it was pretty easy, obviously I was only in the bunch vs up the road or similar but it did illustrate how easy it can be if you hide well.
