Having visited Tenerife three times in the last 18 months and enjoyed (hated) climbing Tiede each time I think the time has come to experience somewhere different.

Were looking to book a holiday in late August and I'm fortunate I'm allowed four decent days on the bike.

Pollensa seems to be the centre of the cycling world on the island but will my wife be suitably happy? Ideally looking for quality hotels, nice shops and good restraunts, not into the whole 'all-inclusive' vibe but neither do we want a sleepy hollow either!

Not sure what your tastes are but Pollenca is fine for a group of cyclists but probably not for the wife, although if she has expensive taste she won't be spending a forture shopping there :-)

Have a look around Port Du Soller ... superb climbs for you out each end and its a pretty place for the Mrs to enjoy.

Depending on what she wants to do, it may be worth trying to stay closer to Palma. Plenty of hills up the left hand side of the island for you to ride whilst your wife can either sit on the beach or wander around Palma.

Late August ?....The roads will be a nightmare for cycling..if you insist head out East from Pollensa, that always seems quieter.

Pollensa as said is best, but late August? Youd have to be insane. High 30's temps are quite likely, far too hot to ride any distance enjoyably unless you head out a 6am and get back for 9-10. Roads are also busy mid summer packed with dithering holidaymakers and tons of coaches, i really wouldnt want to ride any of the Tramuntana roads on a bike at the best of times, no matter how beautiful the scenery, let alone in August. Theres a reason the big teams go Feb-April.
