Hi Guys ,
I currently ride a MTB with 26x2.3 tyres on it but I would like to upgrade them to slicks. I am a bit confused on what will fit my bike.
The tyres I am looking at are 26 x 1.75, any advise would be greatly appreciated

Should be fine as long as you have standard 26" wheels and are not running wide rims (unless you have changed the wheels from the stock ones you should not have an issue).
Personally I used Schwalbe Cityjets as slicks on my hardtail if I am road-riding, good puncture resistance, roll well, have quite stiff sidewalls and only cost £9.99 each at Halfrauds! Did a couple of 60 mile rides on it last year with no flats or issues.

As long as they are 26" they will fit fine.
What do you plan to use them for? If they are to make you're mtb more efficient on the road then personally I;d go for something thinner like this:
26x1.125 click
IMO there's no point in having properly wide slicks unless you're bouncing it off a lot of kerbs and potholes or regularly taking it on rough paths or tracks.

I'd say 1.5" ish slicks are optimal. thye take the harshness out of the road surface nicely, and are slightly more resiliant to bumping up and down stuff, and drain grates and stuff. Specialised armadillos are good but a bit "dead" feeling. Otherwise, any old 1.5" slick 26" tyre will do the job!
