I've been unemployed for eight months or so and not really bothered too much at finding another job, I'm living on the money I made and saved earlier and a few small investments that just about keep me going and I'm really happy to not have the stress and presure of my previous job. I am NOT claiming ANY benefits of any description.
I've done a few odd DIY type jobs for friends and family for which they've paid me a few quid in cash, much less than the going rate and whether I declare this to HMRC or not, I'll decide when I get my next self assessment tax return. I'd like to brag and say I'll hide it but my wife's obsessed with not getting into trouble with HMRC so in reality I probably will declare it.
All this is bye the bye so on to the question.
A friend of a friend has asked me to do some painting work at his house which will involve working from a ladder. But he insists that I get some sort of insurance to cover us both in the event that I fall off the ladder and injure/kill myself. So does anyone know how I'd do this for a one off, one/two week job?

You can't. It's what they call "selection against the insurer." Most people who have accident insurance have the insurance running permanently. Insurers know that their will be times when they are up a ladder, or riding a motorbike, and there will be times when they are in the library or lazing on a beach for 2 weeks.
In your case, you only want insurance to cover the period of a high risk activity. When you've done that, you won't want the insurance anymore. That's not fair, and not how they calculate their premiums.
In effect, you're saying "the weather forecast for the next 2 weeks is rain, so I'd like to buy an umbrella. But I don't want to pay to buy one to have full time, I only want it for the next two weeks."
It's a non starter.
