I've been told you're allowed to ask your employer to see all of the info they keep on you, including emails discussing said employee.

Similar to this: https://www.gov.uk/personal-data-my-employer-can-k...

What is the best way to approach this? Do you need a magic phrase or something?

Sounds like a 'subject access request'.

As above, you can make a Subject Access Request in accordance with S7, there is a fee payable so enclose a cheque for £10.

A simple email to your HR department asking to view your personnel file is all it takes; they then have 40 days to give you access to the file.

Not quite. Because they can charge a fee for the Subject Access Request and if they want to be difficult, no request is made until payment is. This is why I said to enclose a cheque. They don't have to charge a fee but they might do so.

Fair enough, but I wouldn't include the payment unless they ask for it tbh; if the company has an employee handbook it might say something about data access rights and procedure.
