Bit of an odd position I've not been in before and would appreciate some advice. Google isn't proving too useful.

Started a job in Feb 2014 with a 6 month probation, at the 6 month mark I discussed with my manager and decided to extend it by 3 months as I wasn't happy (be blamed it on me when telling HR). HR never officially acknowledged this as far as I'm aware and I've now passed that period.

I've received no official notification that I've completed my probation so the question stands, what is my notice period? the probation 1 week or the full 2 months?

I'm asking obviously because I still want a quick out, I'm hoping the non-confirmation means nothing has changed...

Appreciate any advice.

Your probation period was (as extended) nine months. Nine months have elapsed. Your probation period has ended. Mo magic words need be spoken.

What legally changes after your probation? I thought a company could still sack you within 2 years for no reason?

Probationary periods are matters of contract. Their effect depends on what the contract provides. Unfair dismissal is a matter of statute. Employees must have two years continuity of employment before they can claim unfair dismissal, in most circumstances. If an employer dismisses someone for a reason that is unlawfully discriminatory on one of several grounds, or for reasons connected to trade union activity, whistleblowing, and a few other things, the employee can make a claim regardless of length of employment. The employee can also claim for breach of contract if sacked without contractual notice, absent gross misconduct on the employee's part.
