I have been talking to Graham Bahr and he is happy to do my head, install cams and re shim etc. I've followed his online posts for a while and he's certainly built some terrific m10 and s14 engines. Once my engine is done, I am intending on going to Wayne @ Chip Wizards for mapping.

I've also opted to go with Wössner forged pistons. The head is being flowed and the ports matched to the manifolds etc, so that should mean I get the best from the Schrick cams. A lighter flywheel is also going on. Mapping is being done by Sandy Brown (who can be found via google) and he's also making up the wiring loom. I'd like to get as close to 250bhp as I can but I'm unsure just how realistic that is?
Anyway, the head is due back anytime now and I can get polishing! My only question is this - Is it better to polish to a mirror finish (to aid gas flow) or is a textured (like brushed or satin aluminium) better to help air/fuel mix? I'm thinking the latter but have no sound knowledge or engineering skills to back that up!
Finally, do I need better injectors? I've been advised to go with some from a Vauxhall VXR as they benefit from a more modern design and spray pattern. Any thoughts?

The ports on the GpA heads were CNC'd just like the stock factory heads and unfinished/non polished. Stock heads came in three varieties, stock 26mm high intakes, the Evo2 and later ('89 on) with 28mm intake ports and the Sport Evo same port sizes but 38.5mm intake valves instead of 37mm intake valves.
I believe yours is an early car which means 26mm intakes and originally they were matched to the original 46mm throttle body rubber isolators. The '89 on cars and Sport Evo had 48mm TBs and therefore a different isolator to suit the matching between head and TB. The early isolators are NLA from BMW so you are stuck with the later isolator for the 28mm port-48mm TB interface. This is where I suspect your porting is happening. Make sure that your TBs mate properly with the isolators as if they are not matched there will be a step up in size from TB to isolator.
As an aside, the Evo 2 has 46mm TBs mated to 28mm head, but these used a different TB casting to the normal 46mm TBs, the same casting as the '89 on and Sport Evo 48mm TBs.
Aside from all that anorak stuff, don't polish and don't bother with anything on the exhaust side as the exhaust ports flow well enough for the early GpA heads (29.5mm intakes) to also have untouched exhaust ports.

Well the only thing not to have arrived yet are the ARP bolts and the head is off being ported. Sandy Brown is doing the mapping but also fabricating the wiring loom.

Obviously I couldn't drop a newly rebuilt s14 into a grubby looking engine bay could I?

If your new ECU cannot drive low impedance injectors, then new high impedance injectors are needed. If you are not running sequential injection, then a split cone injector of about 350cc/min @3bar from the Bosch EV6 or EV14 range and run stock FPR for simplicity and lower current draw.
