Hi - for an E46 M3, what brand and weight of oil is recommended? Also, how much does it drink?

Castrol TWS 10W60

As above. That is the only oil to use. It shouldnt drink any but BMW allow a tolerance of 1L per 650 miles or so but that is quite a lot.

Another daft question - is this the same as Castrol EDGE 10w-60 ?

Can't seem to find TCS unless it is only from dealers - seems to be edge is now recommended according to Opie Oils and the castrol website?

Yes, same oil, just make sure its not edge sport, because its hard to tell!

Yes - TWS only stands for ten W sixty anyway.

Just dont buy the edge 'sport' as that is different stuff and according to legend will fizz like alka seltzer, melt away the bore linings and cause noises loud enough to rival Passchendaele 1917.
I bought some today from a BMW MD and it is just called Castrol edge 10W 60 and is packaged differently.
