I think it's something more along the lines of continuity as in some of what's shown on TV is live and some isn't and they don't want the times on the watches on display. Jeremy Clarkson had his watch faced blurred on a Top Gear piece a couple of years ago for a similar reason. He was driving West to East across England attempting to get to the East coast between sunset and sunrise, the time on his watch at various points would have given away the fact that the piece was edited/stitched together for dramatic effect rather than be a true timeline of events.

Regardless of the reason, you'd think it easier to take the watches off!

Edit to add that someone's started the same thread on TZ and come up with a much more sensible answer - the contestants aren't allowed any clocks or watches when entering the jungle, the watches are covered so that they don't know the time.

Would still be easier to take them off...

Nope, I do it too. Evereywhere I go and everyone I see, I check out the watches. Have been known to rewind the Sky box to check out a watch.

That's the reason that I thought they were covered up, the fact that they are covered up as opposed to blurred later is a bit odd though as; yes, it would be far easier to just remove them.

Taking it off first is fine if they realise, blurring is more likely when they film it all and then realise...

It's all part of the twisted mind games these shows play; if the watches were not worn, the contestants would not think about the time, but showing the blanked watches focuses their attention on the time, and the fact they don't know it. A more subtle variation on the playground chant of "I know something you don't know."
