I would say the Omega has the better action, on the Rolex bezel it is possible to move it back fractionally, but the Omega is rock solid.

Sometimes I go early, sometimes I go late, so always use the bezel to time it. Nobody clock watches but I like being punctual for things.
I also use it to time my tea. 4 minutes infusion time = perfect brew.
Other times I just rotate it just for fun because the ratchet feel and noise is so satisfying on the Pelagos.
