I tried the leaked recipe tonight, and it is delicious. The coating was crunchy, but not too crispy. The chicken was tender without being greasy. All in all, much better than the real thing.

I used half the quantities that are specified in the recipe. Being American it says a "cup". I used a "mug". Next time I will use three quarters of a mug.

I would guess that the recipe as shown will produce enough for 10-12 portions.

updated my original post here to update the image hosting, my original pic link had died, and also some extra details added:

use small chicken chunks to maximise ratio of coating to chicken

for the same reason, when half cooked, roll in the mix again and put them back in the fryer

Which is best for this recipe, plain flour or self raising?

It wont make much of a difference with this recipe just maybe a bit lighter over the plain flour it uses. It would make a difference if, like in some southern chicken recipes, it called for the addition of baking soda.

So are the quantities correct? I see the original post says tablespoons, but should this be teaspoons?

Cotty's quantities are wrong. You want the list from my post and TonyK's subsequent post on 26 August. Look back a bit

Thanks, I've just cooked a batch using the ingredients in the op's post (teaspoon not tablespoon), but I used just short of 1 mug of flour.

2 teaspoon pepper

2 teaspoons salt
4 teaspoons paprika
6 teaspoons MSG
2 mugs of flour (sorry not a very accurate measurement

Cooked for a few minutes in the deep fat fryer. They turned out nice....

I then made the mixture into a batter by adding a teaspoon of baking powder and some lager, coated the remaining pieces of uncooked chicken and fried them. The battered version looked more like proper KFC, but the texture wasn't quite the same.. I liked both versions, but would probably not bother battering them next time...

In the 90s, not sure if they do it now, many KFC outlets in the US used to do a lunch buffet like that for a fixed price. I remember being in Des Moines Iowa and witnessing some fat guy eat over 20 pieces of chicken whilst drinking Diet Coke hehe

This was on the BBC a couple of years ago https://www.youtube.com/watch?v=Ohc8QoJVslg
It showed an added/secret ingredient to the gravy was the fried chicken "scraps".

I passed a bus stop today advertising 9 pieces for £5.99 on Tuesdays only https://www.kfc.co.uk/our-food/for-sharing/chicken...

The gravy is inconsistent because some stores do that and some don’t and some stores use more liquid than others etc. It really is pot luck what you get and that’s a real shame. I like the gravy thick and dark with chicken scraps and often you get really thin and light and without and I’m left disappointed

I understood from the KFC documentary a couple of years ago that the gravy was basically the heavy dredgings from the bottom of the pressure fryers.

Which is why A: it's so bloody delicious, and B: you've got a life-time allowance of 4 litres of the stuff before you drop down dead.
