No. Won't work in the same way. The coating will bake solid to a thin dry crust. Deep frying souffles the "batter" coating.

Comet have small fryers for about £45. I picked one up the other day, I'm missing my Valentine which is in storage at the moment weeping

No, as said above^

I got mine from Tescos using double point thingys. You don't need a big one, four litres would be fine for this.

Pan frying is easy. Did this a week ago with just 1 litre of oil. You just have to turn the chicken halfway through so it gets evenly cooked.

Chicken thighs marinated overnight in buttermilk...


Coated with seasoned flour mix...


Pan fried...


Ready for scoffing smile

Batter through a syphon does work. In fact if you do go down that route it's worth incorporating a few "extras" to reduce the oil absorbancy and stabilise the batter etc.

Thanks for the link Tony, I've tried it with fish a couple of times and it's worked fairly well, room for improvement as always though! smile

Thanks guys, i have no cookery skills at all other than being able to follow instruction. if you follow the above it comes out like that. yep thats my photo taken with my phone (galaxy s2). Found a little electric deep fat fryer in sainsburys for 15 quid which seems to do the job fine. would love to hear back from anyone who gives the recipe a go

Fried in sainsburys own brand sunflower oil. more than good enough. I used to think olive oil is best for everything but its a bit wasted on stuff like this. standard cheap veg oil or the likes is fine, but again let me know how you get on!

I had a play today. I've done fried chicken numerous times but (for my sins) always used a commercial mix not dissimilar to KFC so I was interested to see if I could replicate "popcorn chicken" etc

Made up one batch using strong plain flour, double dipping egg-flour-egg-flour. This worked okay deep frying at 170 for around 3 minutes.

Did another with self raising flour, double dip and again 170 for 3 minutes.

Then self raising flour plus 1 table spoon of baking powder, double dip, bit hotter 1t about 180 for 3 minutes.

Sorry, no pics but the third version worked best. I have no aversion to MSG so left it in but could easily be replaced with a another tsp of salt.

Now all I have to do is another batch for the kids for dinner!

Use a deep saucepan. I have a metal steamer, I used the base of that before I had a fryer.

I've been playing around with this one for a while but always oven bake because I don't like deep frying - celery salt was the revelation for me but I'm not trying to replicate KFC, just make something similar but without the need to leave the house.

3 tablespoons of Original Breading Flour
2 tablespoons all purpose flour
1 can Campbell’s Condensed Chicken Stock
1 can water

Cooking Directions:

First we are going to make a roux with the melted shortening and 1 1/2 tablespoon of breading flour. Cook this over low heat for 10 to 15 minutes or until the roux browns in color to resemble a nice milk chocolate color. Once the mixture turns brown remove it from the heat and add the remaining flour and slowly add the liquid(s) to incorporate it so no lumps. Bring the mixture to a boil and boil for 2 minutes reduce the heat and allow the mixture to thicken which would take about 3 to 5 minutes.

Even if there are only a couple of recipes in there that work it's a great way of satisfying kids craving for junk food with a healthier DIY option.
