Victory Pie

A dish of my own invention which uses no directly rationed ingredients at all. It comprises layers of potato, leeks and mushrooms in a game stock, with a mashed parsnip and crunchy nut topping.

Ingredients

I’ve used goose fat for modern convenience, however I’d imagine that every wartime household would have had a ‘dripping pan’ of fat saved from roasts to be spread on bread or used in cooking.

The game stock comes from a pheasant the dog caught. The beast itself was long since eaten, however I’d frozen the carcass. Equally I could just as easily have used the water from reconstituting dried mushrooms, or vegetable stock:

Surprisingly delicious. The earthiness of the mushrooms works well with the potatoes, and the nuts work well to enrich the ‘crust’.

Well here goes! probably letting myself down somewhat with the turd iphone pictures but I forgot to bring my grown ups camera home. frown

My dish is based on the old corned beef hash as a main rather than breakfast.

Ingredients


Pan roasted cod in a brown sauce reduction, braised savoy cabbage with runner beans and corned beef hash with a poached egg.


Seasoned Cod was pan fryed skin side down, then into the oven, finished off on the hob in butter. Brown sauce was a reduction of chicken stock, S & P, sugar and HP brown sauce.

The fish was wonderfully flakey and took on a sweet almost smokey flavor of the brown sauce. And corned beef hash is about the best mash ive ever tryed! On a hole tastied really good, if I where to do it again, I would try the hash with diced potato and not mash.

Nan's Corned Beef Hash/Pie & Rice Pudding


Ingredients by ali_kat_xx, on Flickr

Lightly fry the onions, add the chopped corned beef, sweetcorn, tomatoes 2 teaspoons of Marmite, a good swig of L&P, layer with sliced potatoes, top with a small sprinkling of cheese.

Mix the powdered milk & rice, slowly cook till the rice has absorbed the milk (bit like Rissotto) add the condensed milk & pour into serving dish. Spronkle the sugar & nutmeg over the top to form a crust.

Bake for @ hour

So why use them? I never make things with ingredients I don’t like.

Ok I sometimes make things I don’t like with ingredients I do like but that’s a different matter

Because taste buds change. I never like parsnips or sprouts or cabbage or aubergine or corgette as a child either, eat all of them willingly now hehe

I loved fish & plain chocolate & milk as a child, can't eat either now frown

Nice pie ali, I used to like rice pudding but now cannot stand it.

I thought Branston baked beans were relatively new - not too sure they were around in the 1940s scratchchin
