What's all the fuss over Weber BBQ's?

I've got my chimney lit now.
I intend to do the koftas on direct heat, they'll only take 5 mins and i'll eat them now. Then on the same set of coals do the chicken in indirect heat for 3 hours. Nothing so interesting with the chicken I was in a rush... just some hot curry powder over it and a load of butter under the skin.

3hrs - is that for a particular reason? We did one on sunday, took about 1.24hrs & was very nice
I think if you're doing it in indirect heat, 1 hour or so isn't anywhere close to long enough, to the point I'd be worrying about poisoning someone. Either that or it was a quail sized bird this one I've got in is 2.5kg. I realise it'll depend on temperature and air flow and so on... but I'd be very concerned over it being undercooked at that cook time really. Fair enough if its beef or lamb and its just a bit under how you like it... but personally I'm not confident enough in my ability to get it right with chicken so I'd rather go for a bit longer/lower

I didn't add any more coals no, at the 3 hour mark it was showing just over 200 degrees. I use the Weber premium coals, I think they're meant to do 3 or 4 hours of heat. I've never tried anything longer than 30 minutes, and even then I can see the temps start to drop.

The cheap supermarket coals really are garbage in comparison. They're okay if you want to do a handful of burgers or kebabs or something but for anything needing longer, controlled heat the Weber premium ones are great. Weber do another cheaper one (which is still way more expensive than supermarket ones) and I wasn't impressed with those. So no middle ground for me... cheapest I can get to do some sausages in 5 mins or the better Weber ones to do a 3 hour cook
They do last a lot longer than standard briquettes the Webers I can put out mine by closing all the vents after I have finished and then use them again the next day by adding some burning lumpwood or more briquettes on top depending on what I'm cooking.
However unless you are doing low and slow then 3hrs is a bit much for a whole chicken. I cooked a beer can chicken indirect with coals either side of the bird in the middle in just over an hour at 220c dropping to 190c during. The leg bones stuck to the grill when I lifted it off.

Thermometer is a must for me.
The length of cooking obviously depends on the temperature. If you cut the airflow down (which also means that your charcoal burns more slowly and lasts longer) and stay around 120C/250F, then 3 hours doesn't sound way out for a 2.5Kg bird. I like my chicken skin crispy, so I'd personally go a bit hotter!

The first pic incorrectly shows the compact version, I've checked the spec and the dimensions detailed match those of the standard model suitable for use with 57cm Webers.
Mine is due for delivery on Wednesday, looking forward to putting it to use.

Used my Weber pizza oven for the first time at the weekend with some home made dough (also a first). Oh my god!!! It's amazing! Never had pizza that tasted so good.
Got it a bit hot towards the end and burnt the bottom on a couple but they still tasted fantastic. Took some pics but can't post them on my mobile.
