I have some roasted red pepper pesto at home and was going to cook it with some pasta, fried chicken and some veg but i've run out of pasta so was wondering whether it would go with brown rice or not?
i don't eat white pasta/rice and local shops don't stock brown pasta and don't have time tonight to go to the supermarket so wondering could i cook it with rice instead?

If the missus is out I'll cook like a student and throw whatever is left in the fridge/cupboard into a bowl and see what comes out. I've had pesto with rice before. I'd tone down the salt in the rice perhaps but its tasted fine.

Don't see why not - although personally I think brown rice tastes like the bottom of hamster cages.
I'd be inclined to liven it up with some diced fresh peppers and a bit of red onion.

I'd be inclined to liven it up with some diced fresh peppers and a bit of red onion. oh yeah i'm not just having rice and pesto  the plan is a chopped fried chicken fillet with chopped red pepper, a red onion, some chopped mushrooms and half a chopped courgette

Green Pesto on brown toast with no butter, sounds strange i know, but is very tasty

When i was visiting the parents last week the old dear put out a salad with pesto on it - weird idea i thought, but upon eating said salad it seemed to work
She bought it from M&S i think!
