This is something I have not done before Fish and Beer Battered Chips with Pea Fritters
There is nothing better in the summertime than going to the seaside and having fish and chips so I thought I would do a bit of a twist and batter the chips instead of the fish whilst sitting on the balcony overlooking the ocean.
Initially I was going to do an egg, milk and beer batter and have battered cauliflower but as I started cooking changed the idea
I first boiled the potatoes for a few minutes then fried then in the wok to get then slightly crisp. I added 2 tablespoons of cider vinegar to the beer so rather than add vinegar to to final dish, it was already added. There was a tablesppon of bakig powder in with the flour too.
Back up on the balcony the oil in the wok was re-heated and the BBQ warmed for the tuna. Each chip was dunked in the batter and then dropped in the hot oil.
The remaining batter was poured into the blended pea and mint mix, fored into a pattie and fried until set and brown on the outside.
Assemble all of the above on a plate and eat !
