Cod loin in panko with tomato and beet salad. And oven chips for the first time in years.

My version of Corned beef hash! Spuds, onions, red pepper, Chorizo, Garlic,Chilli powder, fried eggs, corned beef,parsley and grated cheese, served with spicy tomato salsa and crusty bread. Marvellous.

Looking forward to tonight, making something a bit different for me.

Making pan seared duck breast (first time cooking duck) with mustard mash and steamed veggies with a red wine jus

And cheese, crackers and home made chilli jam for pud.

How rare can/should you have duck?

Simple compared to many on here, but lovely. Yep, they're oven chips and oven onion rings smile

Plenty. Just make sure you get the pan nice and hot and render all the fat out first (score the skin to help it escape).

Also made som crispy cranberry stuffing balls to add a bit of texture

Been invited to friends for dinner tonight....they're not giving much away but they have mentioned Arbroath smokies for a home made pate. Quick google has me quite excited now.

Sure did.

Panko
Salt
Pepper
Cayenne
Onion granules
Sesame seeds
Flour for dusting
Egg for washing.

Shallow fried for around 5 mins, drained and served. Very easy.
