You need a tamis. A fine one at that. Plus lots of elbow grease. Oh. And a powerful blender.

It's worth the sweat.

Pork ribs this evening went for a memphis style dry rub, good option for those who don't like sweet and sticky ribs and prefer to taste the pork.





Cheated a bit with a slow cook in the oven then a indirect hort smoke on the weber. .

It was good but they were busy and service was patchy. The trouble with it is it leaves you wanting more and it isn't cheap.

I had three glasses of wine and my bill was £61.

Special birthday meal for myself today.

Giant prawns, bought from Costco.

Look at the size of them...




I wanted to do them shell-on, but trying to remove the vein and keep the shell intact proved impossible to my inexperienced hands. So they ended up being shell-off and almost butterflied as I cut too deep.

I cooked them in olive oil, red chilli peppers, and garlic.




Served with mixed leaf salad.

Sorry about the presentation - I did my best.

That's pretty reasonable actually. I've spent £50 in Yo Sushi before now, and that's significantly cheaper than a "real" sushi restaurant.

Looks lovely - 50 grams of butter would have worked wonders as would crusty bread and lemon wedges.

In fact it might be tonights dinner.......smile

Yes it probably is reasonable but I've had to cut back on the restaurant bill since Junior came along and my OH is on maternity.

Still, a good experience.

It's a great tragedy in my life that I cannot east mussels. I got extremely ill on them 20 odd years ago and every time I eat one now I feel ill.

I used to love them, I love the smell and dipping bread in the wine sauce.

And they look very nice indeed!

I carried on aging a piece of sirloin and skirt in the fridge in a new J-Cloth for a week. Seems to intensify flavour.

I actually just put it in a moderate pan with oil then butter to finish. Good crust as a result but a tougher texture.
