I bought a 44.5kg side of pig. Beautiful thing. Duroc is the breed which is on the fattier side so hopefully good flavour and succulence.

I've spent 5 hours tonight butchering her.













I ended up with a brined hock, a hand to smoke, a Boston butt to smoke, ribs, belly to roast and to cure. Loin to cure and loin chops, on and off the bone, leg joints x3, tenderloin.

£2.19/kg

That pig looks amazing. This guy has some excellent videos on butchery.

Unless this is for an episode of "Man vs Food - EXTREME edition" then it's kind of stretching 'Photo of your dinner' rather a bit. wink

(Ok, I guess it is 'Photo of my dinner, and many, many more dinners to come' biggrin )

Not the best picture, but this was lastnight dinner:



Burger was a Jamie Oliver recipe:
Mince meat
Crushed Cream crackers
An Egg
Fresh Parsely

Finished off with a rasher an a half of bacon, a slice of Tescos sliced cheddar with scotch bonnet peppers melted ontop, some sliced red onion & lettuce on a toasted Tesco cheese roll.

I can honestly say the burger itself is one off if not thee best Ive had and there was no requirement for any sauce etc. Well worth a try for any burger fans.

Just smashed the diet to bits again.

stuffed turkey of mozzarella, chorizo and basil with mushroom & beer risotto.



I feel badly unhealthy but ever so tastefully good!

Got 2 pieces of cod out of the freezer, and cut them into chunks for deep frying as finger food for tonight.




Batter was Delia recipe, just flour water and salt but I used 50 : 50 cornflour and self raising instead.

Served with salt and vinegar, strongbow cider with lemon as a refreshing drink to go with them rather than anything too heavy.

Last night's dinner:

534g of rump (as shown in the earlier pic), with chips, peas & sweetcorn, and a brandy & peppercorn sauce.




And the obligatory cross-sectional pic so people can say it's not cooked how they like it. smile

Normal rules of waffle burger are 2 waffles, top and bottom. But as the missus decided to pinch some of the bottom one, I didn't have a whole spare one.
