Another rib of beef. Hung for 3 weeks, it was fantastic.

I wasn't sure if this should be here, 'Show us your Easter noms' or the BBQ thread.

Anyway, here is our dinner...

Rosemary and garlic syrup smoked lamb with feta, slow roasted in a kleftico.

Happy Easter!

Home made, proper beef chilli, made with beef brisket and simmered slowly for hours. None of that mamby pamby mince stuff! Contains proper smoked, dried Mexican chillis soaked in coffee, loads of garlic, chillis, cinnamon, cumin, smoked paprika, onions, bay leaves, tomatoes and and finished with scotch bonnet chillis and coriander!

Served with home made fresh guacamole, salsa and toasted nachos with melted cheese, tomatoes and sliced chorizo, all finished with a drizzle of sour cream and a some home made chimmichurri sauce!

Do you have the recipe for this?

Couple from the weekend while in Glasgow...

First off it's the superb Western Burger and ribs from Buddy's. Mouth watering home smoked bacon and beef patty in a brioche bun. My only regret is not doubling up on the patty..it needed another imo but otherwise a very serious burger. https://www.facebook.com/BuddysBBQandBurgers

5 Guys this time. A first for me but most definitely not the last. Pictures may not do it justice but let me assure you it's how I expect the perfect burger to taste imo.

I have been to five guys a few times now and the cajun fries are delicious but i tend to find the burgers all taste the same regardless of toppings because everything is cooked on the same hot plate and they go soggy very quickly because of the way they wrap them in tin foil. Shame because the concept is good, Don't get me started on their hotdogs either!
