Very nice Matt.

40c is far less than rare.

I'm interested to try it.

With my current technique (without water bath) i'd aim for a slightly higher internal - say 50c, and then blast direct to sear for a minimum amount of time until desired char.

But this looks just as good but a slightly different way of getting there.

Remember that's 2/3 of the way through cooking. Aiming for 55 degrees after its gone in for a second time.

I was following the slow cook - rest - blast technique posted here a while ago.

Looks good! Personally I find that rib roasts benefit from a little more cooking than most other beef joints, so I usually do them to a 60c internal temp. Definitely my favourite cut of beef! smile

I knocked this up for International Burger Day last week.

Brioche Bun, split and spread with horseradish mayo
Two Finest Quarterpounders, cooked med-rare and rested for 10 mins,
6 oven cripsed sliced of smoked Danish bacon
Danish Blue cheese
Red onions, sliced and fried, with a little brown sugar and Worcester Sauce to caramalise.
Mushrooms fried in garlic butter.

Cajun chicken with sweet potato mash.

The mash was made with a red pepper paste, pancetta and okra.


It's a crap picture but you get the idea.
