Some Autumn grub from Sunday night. Beef skirt in ale with a suet cobbler crust.









Skirt is one fantastic cut of meat!

that looks very good... i've used rib trim for such a thing before which was good, but that looks incredible!

I made home-made potato wedges for the first time yesterday. I am very proud of myself (I have low standards and realistic expectations. smile )

You'll have even less respect for me when I tell you it was just a jar of Uncle Ben's sauce and some mince. I'm really not much of a cook.

At least I made my own wedges though. smile

After talking about burgers all of yesterday afternoon with a colleague, I decided that I really wanted a burger for tea. Alas, being the day before payday meant that I had literally no money left to procure a burger, plus I had already taken chicken out of the freezer.

What's that saying about being a fat bd being the mother of invention..?

Just a quickie; penne, roasted butternut squash, red onion, yellow pepper and garlic cloves tossed in creme freche and pesto with an Aldi weiner schnitzel.

Loads of lamb left over. Going to add it to a takeaway curry that's in the freezer. Balti mushroom bindi with leftover lamb, Chilli chicken Masala and Garlic chilli chicken for tea tonight. smile Oooft.

I've never used skirt before but I'll need to give that a go, the marbling looks like Wagyu cool.

Just been to my very good butcher and he laughed at my proposal to use skirt as a braising meet in a beef and ale pie having been inspired by the previous poster.

He said "chuck every time"... confused

chuck is the traditional braising beef but anything that you need to slow cook can be used. I use brisket for my chili.

I did make a great beef ragu using chuck the other day. It cooked down to nothing after 3.5 hours in the oven and another 2 on the hob (I wouldn't have left it on the hob for so long but my missus was late home from work laugh ).
