Yeah, we used the above BBC recipe as a basis. Left a few bits out (peas, corn, chives) and added more cheese, spring onion mash etc. Lots of fish stock, it was pretty full on flavour wise.
It was bloody good. Certainly better than any I've had elsewhere.
Tonight's dinner, chicken, courgette, sautéed spinach in garlic & sour cream, and a bit of salad.

Should be a delicate flavour that celebrates the fish, no need for onions or stock or other powerful 'enhancers'.
Problem with chucking it all in is you lose control over cooking the fish which requires care. The best recipes require you to carefully poach the fish in milk which then forms the fish infused liquid to add to a roux.

Very simple but because (as another poster said) it uses the poaching milk & cream in the roux, you don't need to add a load of other stuff to enhance the flavour.
Plus, no prawns. I can't be doing with prawns in a fish pie; without fail they are always overcooked and rubbery. What's the point of wrecking delicious prawns? I'd rather fry them up and serve on the side if I was that desperate to have them.

It was the first time i/we have made a fish pie tbh. Always happy to try something different though, all input much appreciated
