I had leftover Chilli Con Carne made from an Uncle Ben's jar, some mince and an inappropriate amount of Sriracha sauce, with home made oven baked potato wedges. And, frankly, that was adventurous for me. LOL

Sounds good. You're pushing the boat out with those wedges.
I had chilli as leftovers for lunch only no Uncle Ben's. Let me know if you're interested in a dead easy recipe.

Quite seriously, though, if you want to try home made wedges, then it is insanely easy. And if you are at beyond the same level of ignoramus cookery as me then move on, but if not then walk with me...

Take some charlotte new potatoes. Wash, then cut into quarters (longitudinally, if we;re going to get geeky. Although I don't think it makes a fkload of difference)

Grease a baking tray with a few squirts of 1 cal spray oil. Or, if you aren't on a diet, douse a baking tray with oil. Whatevs.

Spread the wedges on the baking tray and spray a few more sprays of oil on them. Or if you're not on a diet, fking drench the bds.

Oven cook in a pre-heated oven at around 180°C on a fan oven (adjust as necessary for luddites) for around 25 mins.

Experience fking amazing home made wedges.

Well here's my steak from the other night. Sirloin plus champ mash and a whisky, mushroom and cream sauce. Very much not haute cuisine!

parboiling is always worthwhile.
10 mins in boiling water.
Drain. Shake the pan.

Lid off, dry them out.

Butter.

Now roast in goose fat.

I do the same, but put the wedges in a bowl & shake on 3 or 4 teaspoons of cajun seasoning, add a good glug of oil & then mix well.
45 minutes on 200c. Very nice indeed.

I do this, toss the wedges in a tsp of rosemary and a tsp of paprika before cooking.

Yep needs some garlic / onion powder and anything else in the cupboard that's appropriate. Sweet potato ones are great too!
