Made a version of this after seeing this post. Swapped the spring onions for leeks, added some thyme, garlic, diced sweet potato and used dijon mustard instead of grain, was really tasty, thanks for the recipe Lamb podina/pudina curry and rice. Best curry i've ever made I think - lamb was lovely, being neck fillet.
Very fresh, due to the fresh mint, and coriander, and a squeeze of lemon. A great balance between hot, sour and sweet - I used lots of fresh green chilli, some sugar, fairly sharp tomatoes & a little white wine vinegar.
Made from scratch with fresh green chilli, coriander, and mint, and curry powder, turmeric, chilli powder, coriander leaf, green cardamon, mustard seeds, cumin seeds, and bay leaves (and a teaspoon of curry paste when I felt it wasn't strong enough - seemingly just needed more time to simmer)
