Not as pretty as some on here but worked out lovely.

Lamb kebab in pitta with lettuce, pepper, pickled red cabbage, jalapenos, chilli jam, mint yogurt.

Thanks guys,

The food was indeed eaten outside with family and wine, quite a bit of wine. Great way to spend a Summers evening beer

The tomato and cheese was based on a saganaki recipe I have used many times. We have an abundance of tomatoes at the moment so I am trying to use them up!

In the tray I put chopped tomatoes, fresh dill, lemon zest and olive oil. On the top was the feta and halved tomatoes, then just seasoned and a glug of oil and put in the oven for 20 mins or so. Nothing to fancy really, just fresh, ripe tomatoes.

I put them on the gas grill outside for 4 mins/side, then into the oven at 150C for 8 minutes.
BLOODY LOVELY!


I will definitely be doing those again!

Yep! But it's ideal "sauna beer". Not too strong, so easily drinkable fairly quickly! This was our favourite place in Sweden. A couple of cabins attached to a farm. Free roaming cat, dog, cockerel and chickens. 50 metres to the river to cool off after the sauna. Bliss. Heading back there next year, but staying more than two nights next time.

Dry cured and pan roasted Scottish farmed salmon.

It was from a huge fish and was so much nicer for it with huge flakes. It's a joy to cook after curing for 15 mins in a heavy sugar and salt mix. I stay two minutes ahead making sure I still see a slight band of undercooked flesh before resting for 4 mins in the warm pan away from the heat so it continues to warm the centre until just set.

We are on holiday at my inlaw's place. I agree. They're terrible.
