Feeling a bit under the weather/hungover meant some strong flavours were required.

Left over chicken curry making commenced.

Started with a generic base which I simmered for a good few hours:



Fried off some crispy shallots:



Threw in some curry paste, swirled in the shallots and piled up on rice:

A quick snap of our Norwegian Christmas dinner this evening. Pinnekjøtt, boiled spuds, braised red cabbage and mashed carrots and swede. It was amazing!!!! Especially washed down with the aquavitt.

Our routine means that we don't eat at home on Christmas day. Here is my version of Christmas dinner, cooked today, at home.

Rib of beef, twice baked root veg and a black sticks blue and roast chestnut sauce.

Similar to me, but I used vodka...

whats the final covering on yours (3rd pic) as I only used dill:



My picture looks a little strange as its on clingfilm on a white table reflecting sunlight so looks like its catalogue picture.

Its lovely and have slowly been eating it for a few days now.

it's a mixture of dill, tarragon, fresh grated horseradish and... more gin

the horseradish is pungent to the say the least... think i'd dial it back in future. Whilst grating it was like mustard gas!

Yep I couldnt use much A) difficult to find b) $99.99 a kilo here and c) OH doesnt like it too much so I used bare minimum but scraped it all off afterwards.
