Can you cut a duck/chicken perpendicular to the muscle fibers then?

Shirley you would just end up with tiny bits of meat.

According to the bible of wikipedia - beef mince is commonly made from the off cuts left over from when the traditional steak cuts are made.

So I guess steak mince is the more quality cuts EG rib-eye, fillet and such minced up.

Which is what is in my slow cooker at the moment...smells great, looks good and tastes lovely. Except i've no photos to show you as I went out to afternoon tea at a friend's shortly after preparing it.

So...... are we going to just keep this to just what is commonly known for steaks EG beef, lamb, pork and fish?
