Managed to pick up a copy of the cookbook for £9 including delivery from here:

Looking forward to trying some more of the recipes, as this one is excellent. Will need to try the alternative chillis, as it does seem to be a struggle to get decent jalapeños here.
Nice one, just done the same https://www.abebooks.co.uk/book-search/title/kenny...

I'd had it in my Amazon wishlist for a few weeks but the price has always been much higher (currently £33).

Sorry Kenny, but I too would definitely go for chipotles over fresh jalapeños.
For a start, you can't get decent jalapeños in the UK. They're all greenhouse grown in West Sussex / Holland.
No heat to them.
I'm thinking of ordering dried chipotles from Amazon, could I ask what sort of weight you'd put in if following the recipe for the other ingredients? For a start, you can't get decent jalapeños in the UK. They're all greenhouse grown in West Sussex / Holland.

100% agree on not using pickled jalapeños, but why not get some la coste?a chipotles in a can from Amazon or a local specialist store?Thing is though, by the time you chop them & they cook in, there's probably no difference.
Whatever is easiest, I suppose.
Smoked jalapenos - chipotle chillies in adobo sauce, from here > https://www.mexgrocer.co.uk/brands/la-costena/la-c...

You can add more if you don't think it's smoky / spicy enough.
Having used both, I actually prefer the flavor of rehydrated Chipotles that have been pulverized over the chipotles in adobo - they add the background "depth" of flavor and smokiness I want without dominating the way adobo does (in my experience at least). The canned ones seem either un-noticeable, or if you add a bit more, all you taste.

Just cooking this recipe but have used a can of vocation brewery sweet temptation which is a chocolate caramel stout.
Roll on Sunday dinner, it will of stood for 24hrs to mature in taste.
I'm about to dig into some thats been sat overnight. It was bloody good first time round so we'll see!Roll on Sunday dinner, it will of stood for 24hrs to mature in taste.
Not tried it, but puy lentils and jackfruit are both pretty robust and would fill in nicely for the mince and steak. Bear in mind that lots of the flavour comes from the browning of the meat, so you'd need to get a bit creative to work around that, plus potentially reduce the cooking time too.

Thanks for the suggestions. It'll go in the slow cooker, as I always do but I'd better try it before inflicting it on others - it's for friends who run an Indian takeaway and who have supplied us with meals whilst we've been unable to cook after a car accident. I really, really don't want it to be a disappointment.Riley Blue said:
Has anyone made a vegetarian version? Is it just a case of leaving out all meat or substituting it with something - what?
I've been asked to do so as a 'thank you' to someone but I've never cooked veggie before.
I have. I've been asked to do so as a 'thank you' to someone but I've never cooked veggie before.
Same basic recipe but with sweet potato and lots of chopped peppers in place of meat, plus a variety of beans - kidney, pinto, black-eyed, butter beans.
Mash some of the beans against the side of the pot to give the sauce 'body'.

After a brief chat to my dad (Tickle Snr) about Jailhouse and Texan style chilli, he dropped this off this morning. Not sure where he got it from! Anyway, will come in useful now it's officially chilli season.
Mexican oregano is The Thing, but use sparingly as it's a lot stronger than European oregano. Busy day yesterday. I planned on doing a chilli, and a curry. My brother asked for me to make some bread and sausage rolls. I then decided all that in 1 day wasn’t enough and done cheese straws and some marmite and cheese sausage rolls too! Was knackered at the end of the day.
