To be honest my personal preference is for a one piece or Japanese two piece, I find that knives with studded wooden handles tend to not last very long.
I've recently quit the Chef business and spent an absolute fortune on Shun Japanese knives just last year, to replace my Globals, it's like going from Ford to Ferrari, easily the best set of knives I've owned and stay sharp so much longer than the Globals, which to be fair had their share of abuse over the last 14 years!

I think I'm in need of something a bit smaller. The 240mm Gyuto is outstanding and still performs beyond my expectations but sometimes I feel I could do with something a bit easier to handle (eg. to cut mushrooms and cherry tomatoes etc).
JCK have their own Aogami Super 150mm petty. Would that be a decent size? Too small / big?
