The 'Tas' chain of Anatolian/Turkish restaurants are a good shout for a vegetarian meze, to which you could add a kebab or grill for yourself:

I'll second Tas, and will also very strongly recommend The Mug House (which also has some cracking offers on TopTable) - a pub which is good for both meateaters and veggies.

Roast is the most disappointing eating experience I have had in many a year, and dinner there was the only time I asked to see the manager to explain why I wouldn't be paying the bill in full. Others may disagree but I'd suggest you avoid it like the plague.

Apparently she's been wanting to go for ages and has booked it....I didn't mention that after a week in the Dordogne last month I've had enough rich French food to last a lifetime. Ah well, I'm sure it'll be lovely.

I'd disagree with that. Oblix is average at best (poor for the price you pay).Hutong however (also in the Shard) is well on its way to a Michelin Star.
I live in Shad Thames so here are a few of my thoughts (in no order). Also does vegetarian include / exclude fish?
1. Pont de la Tour - Great fish restaurant on Butlers Wharf and has great views of Tower Bridge. (£££)
2. Hutong - In the Shard (££££)
3. Story - Tower Bridge (£££££)- Very impressive place. Reservation essential.
4. Suchard - Thai place on Tooley St (££)
5. The Garrison - Bermondsey St (££) - Very good. Get a reservation.
6. Pizzaro - Bermondsey St (££)
7. DMT - By the Scoop / Tower Bridge (£) - Less formal but reasonably priced.
Regarding Taz - It's alright. There is another chain called Haz which is much better. The closest one is probably in St Pauls. But nothing wrong with Taz. Does what it says on the tin.
Roast is pretty good but Union St Cafe is much better IMO. I've not been impressed with the Shard offerings, Hutong being better than Oblix or Aqua but I wouldn't go again & all restaurants seem to hope the view makes up for the food. I suppose they have plenty of tourists to impress but it's a bit disappointing for those of us who are SE1 dwellers (albeit during the day only).
Tas is not bad but not in the same league as the above but is much cheaper.
Del Mercato in Borough Market is quite good. The waiters can take themselves a bit seriously.
Nelsons by Borough station is cheap & cheerful Italian. Always packed during the day.
The Table on Southwark St is unpretentious and does a great breakfast. I used to go to Roast but this is just as good, cheaper & not so stuffy.
Mark Hix has a new place opening in a few days on Gt Guildford St but I'll reserve judgement until I've been there.
I've not eaten at Pont de la Tour but have heard good things about it.
If you like Indian then Est India in Flatiron Square is very good value for money. If you are craving some company then you can always pop into the massage parlour around the corner (number 69 ironically).

Another option is 40 Maltby Street. It's off the beaten track and very much a local's place. Really nice food, very relaxed and reasonably priced. It has a very unpretentious and authentic feel to it which would be perfect for a date. Usually lots of veggie options.
Casse Croute would also get a big thumbs up from me. Booking is essential as it's always full and doesn't seat many. The menu changes daily but I've always had great food there - authentic French bistro fare. Again, very relaxed atmosphere. If you can get a table this would be my first choice.
