I'm in France at the moment. I come to France many times each year, and whilst I'm not a particularly fussy eater, I do know to avoid andouillette. About 4 hours ago, I ordered a cassoulet d'agneau which arrived, without warning, with ingredients including an obvious andouillette sausage. I removed this to a side plate and ate the rest (which was fine).
4 hours later, back in my chateau, in my bed, I can still smell it. Why oh why does anyone human think that andouillette is a good, or tasty, or wholesome thing?

Boiled, andouillette is disgusting beyond belief.
But, give it a chance.
Sliced crossways, given a Caribbean spice treatment, skewered and BBQd, it is actually quite nice.
Googled. . . . and you end up with the most annoyingly English of words . . . "nice", with "quite" added for effect. But, give it a chance.

I know you appreciate good foods MC. So I'll avoid if that's ok.
I ordered andouillete in France once, in the restaurant in the village where my folks have a place - they know the owner/chef v. well, and I've met him a few times.
He came out of the kitchen to tell me "you *really* do not want that, please order something else".
Looking it up afterwards, I remain eternally grateful.

Had this in Paris, maybe it wasn't quite the real deal or had been watered down for the tourists, but it didn't seem overly powerful or revolting. Definitely had a whiff about it!
The real stuff smells very strong. It has that spicy, protein rich smell that is quite reminiscent of still-slimy dog st. You'd know it if you had it.Just googled it, Wikipedia says:
"True andouillette is rarely seen outside France and has a strong, distinctive odor related to its intestinal origins and components. Although sometimes repellant to the uninitiated, this aspect of andouillette is prized by its devotees."
So it's mainly for copropahges then.
