Ragu how long do you give it

So a Ragu sauce it can have mince, veal, veg, whatever you like but the key question is how long do you cook it for?

I've seen everything from 20 mins to 3 or 4 hours cooked in the oven.

I quite often cook it twice initially for an hour or so the day before leave it overnight then another 30 mins before it's served I haven't got the time to cook it for 3 hours!

Similar, sometimes (ok very rarely) i will start a sauce one day and three days later its ready. Just keep it on low for a few hours each day, topping up as I go.

Having said that 95% of the time it gets started at 4 and on the table by 7

Eight hours in the slow cooker, plus a further day's 'maturation' on the stove top.

Same with curry and chilli.

I'm with Tony, it's a multi day effort. Longer the better. Keep topping up with water and wine, a slow cooker is your friend.

Please don't capitalise the R in "ragu". That makes it a brand that comes from a jar.

If investing such time in a ragu, please leave mince to one side and use shin beef and pork cheek instead. Texturally superior, cheaper and you know what's gone in to it.
