Got a veggie for Xmas this year (makes a change from the Turkey... smile )

They are quite happy with a roast dinner minus the meat 'n gravy, but I'm trying to think of something to add to make it a bit more special. Nut roast seems a bit cliched.

Needs to be something that is easy to cook on the day (as with 10 to cook for and only a standard oven, things are going to be quite hectic) so something that can be prepped the day before and stuck in the fridge until required is a bonus

I'm making myself a big curry. Lots of different dishes some of which will be done the day before.

Oooh following.....

I've got 4 non meat eaters coming, they also initially said don't worry we'll eat the veggies, but it feels wrong not providing a meal for guests. Normally I'd ask them what they want but we've just had a family bereavement on this side of the family and TBH Christmas isn't high up on their thought list at the moment.

I now think that they are bringing a Quorn roast for three of them but the other doesn't eat Quorn, she does eat fish though and says if she fancies more than just the veggies she'll bring fish.

I'm giving up on stand in main courses and going for a wider and more substantial range of veggie dishes, the other advantage being that I can prepare these ahead of time. I'm planning a gratin with leek and mushrooms cooked in veggie stock with a cheese sauce. I'm also thinking about stilton stuffed field mushrooms.

Just got to come up with one more cook ahead gratin type thing if anyone has any ideas? Was thinking cauliflower cheese but I think it's getting a bit overly cheese based?!

If it helps OP, I am told that Bisto "red" beef gravy granules are suitable for vegetarians (makes you wonder what is in it!). I'm planning to make a veggie gravy ahead of the day to just heat up.

Word of caution making anything with cheese in it. Not all cheese is "vegetarian" and some fussy veggies will refuse to eat one that isn't!

Good point about cheese, I have checked that mine are OK with cheese (and dairy products generally).

Ah, couple of ideas there


Curry: like the idea, but it won't go with the roast veggies (and yorkshire puds!) that she likes.

Field mushrooms sound good
Mushroom wellington, off to look for the recipe now!

My wife has been vegie for 30 years (she's 42). She doesn't like blue cheese, only chooses to eat veg cheese. She doesn't like mushrooms or eggs. She will eat eggs in things but doesn't like egg based dishes, unless it's my mushroom omelet then I only ever get to eat 3/4 of it.

To be honest, I love her with all my heart and she is my life but fk me is she a pain in the arse, every fking meal is dominated by what to feed the vegie. I don't bother now, if she says something is good enough for her ("just the veg is fine") then that's what she gets. That makes me sound really heartless doesn't it? Sorry, I'm not but the fact she is a pain about mushrooms and eggs then snaffles my omelets says it's a mental thing she needs to get over her self. I understand and sympathise with the meat thing but aghhhh.
