Restaurants in Soho - New York

We are off to New York in a couple of weeks and have the following eateries in the list to go to:
Smith & Woollensky
Shake Shack
Norma's @ Le Meridien
Southern Hospitality BBQ
Grimaldis
Can anyone recommend any nice places to try in or close to Soho?
Wanted to go to Balthazar but no availability

The Dutch is hip at the moment, modern Pan-American cooking, is on Sullivan I believe. Not ate there yet, think we have a table there next week, colleague has arranged, he says its one of 'the' places right now.
On a completely different level, Lombardi's on Spring is supposed to be the very first pizzeria in NYC. Don't know about that, but the pizzas are great, best clam pie in NYC IMO.

Not quite Soho, but West Village / Noho is Organika (http://www.organikanyc.com/).
We were there 2 weeks ago and had a fantastic meal, along with some superb cocktails.
You have Gimaldi's listed, you may have to queue but it's well worth the wait.
Bear in mind though that they don't have a liquor license so it's soft drinks only.
The best place we ate (in fact the only place we returned to) was a little further afield near the Rockefeller plaza on 49th street is Iroha Sushi (http://irohagroup.com/irohahom/).
Obviously only any good if you like sushi!
