Lovely risotto with pancetta and borlotti beans. Even better reheated for the next day.

For lunch today I'm having a spicy bean burrito.

In a saucepan heat :
1 tin of Tesco taco beans
1 tin of sweetcorn
Chilli powder to suit your taste.

Cook 1 pouch of microwave rice, add to the pan when ready and mix the ingredients.

When cooked allow to cool and add to a soft flour tortilla. I also drizzle the contents with a spoonful of natural yoghurt. Some cooked chicken can be added too.

Very quick, easy and tasty.

Bit of an effort but home made falafel are really good, my family of ardent carnivores love them. I have them like a kebab in pitta bread with salad , mint yogurt and chilli sauce, but they get eaten as snacks too just sitting on a plate in the fridge. A faff, but a cheap faff.
