Fried Chicken!

So, off the back of the Deep Fat Fryer thread, I will be doing double fried chips tomorrow night with Fried Chicken with home made slaw (Full fat mayo naturally!)

So anyone got any good Fried Chicken recipes? I am look for 3 different types, a spicy one, a none spicy one and a joker, could be spicy or not but just different to the other two..

So PH full fat menly men, impart some wisdom upon me, the fryer has already done onion rings, chip, Samosas and hash browns this week so we have some good flavoured oil to drown everything in biggrin

There was a huge thread about home made KFC recipes a while back, see if you can dig it up.

Do triple cooked chips, bit more of a flaff but much better.

As for fried chicken, I got some MSG cheap from a chinese supermarket which helps.

I used Jamie and Jimmy Friday night Fried Chicken recipe, but did it with wings a la the KFC / salt and pepper wings threads on here. Not tried it on legs yet but sure it would be good.

You can look it up, but basically:

Brine for 24 hours. ~40g salt / l
Marinade in buttermilk for another 12 hours.
Coat in secret seasoning. Flour, salt, pepper, cayenne, cumin, onion powder, garlic powder.
Fry.
Finish off in the oven.

Go for Japanese Karaage, so much tastier than any fried chicken I've had before. Recipes online, but if you have an Asian market nearby they sometimes sell ready made packets which are still good.

bit of an aside but is triple cooked chips the ultimate?

i mean sure 3 times is probably better than twice but is that the top of the curve? what happens with 4 and 5 times?

anyway i'm envious of your deep fat fryer. i tried to make fried chicken in the oven once. for some reason, it didn't work.

why not just use a wok?

Lovely. Can you bring some to Sussex please, my girlfriend is making vegetarian burgers. I'm not sure what one of those is, but unless it's made from real vegetarians I'm probably going to be disappointed.

I've never managed to make fried chicken anywhere as good as KFC. Even following the leaked secret recipe, with much brining and marinating.

If only KFC would offer a premium version using a step up from the cheapest, sttiest chicken. Or, just the crispy coating and skin. I could quite happily eat that on its own. lick

I think you need a pressure fryer to do it justice.

Haha, the company I work for supply KFC,everything we do is cheap and nasty.I think we supply 20% of the chicken consumed in the UK.

Sorry mate but it's all gone, hope you enjoyed your veggie burgers! As for the chicken, it was nice. I followed a recipe but if I did it again I'd tweak it a bit, probably more garlic and maybe some chilli. Concept is good though and it's dead easy!

2x teaspoons of the above,
10x teaspoons of rice flour,
1x teaspoon of ground black pepper,
1x teaspoon of ground white pepper,
1/2 a teaspoon of salt,
1/2 a teaspoon of chilli powder,
1/2 a teaspoon of garlic powder,
1/2 a teaspoon of ginger powder.

Cut some boned chicken thighs into strips and leave to soak in milk for a while. When ready spread your coating mix in a baking tray or something and coat your chicken strips via a quick beaten egg bath.
Fry until golden and consume all. Wake up in the night thirsty as f*ck.
