To get the coals lit using a chimney, I dowse kitchen paper with some veg oil to make it burn longer and hotter. It smokes a bit, but doesn't leave any petrol-y taste and it works every time (even using slightly damp kitchen paper that I've liberated from the recycling bin ) deckster said:

Two Big Green Eggs here. As others have said a decent dual probe thermometer makes life easier, particularly for cooking low and slow. I also use a BBQ Dragon for getting it very hot in a short time. Ideal for cooking pizzas:

They do look very nice, but in terms of functionality i think they're going to fall a long way short of a traditional kettle. Style over substance.I like the look of Black Forge stuff and the Morso kit looks fantastic.

Assembled and started, just to 'bed it in' and burn off the 'newness'.
Chimney starter is great - within a few minutes the charcoal's glowing nicely. After 20 minutes appears to be perfect with white ash all over so I tipped into the grill. Spread it around a bit, which I think is where I went wrong, and popped the lid on. Went back to it 20 minutes later and it wasn't as hot as I'd expected. Not gone out, but barely living. Opened the vent in the lid to try to draw a little air through and stacked the charcoal a little but I think too late. 45 minutes or an hour later and it's pretty much out.
I wasn't aiming to cook anything tonight, which is just as well.
I think before I start grilling decent steak I'll have a few runs with bangers and burgers to get the hang of it.
Onwards and upwards. Huzzah!
Today I cooked on it. Awesome! I am a BBQ God!
Covered 2/3 of the lower plate with foil and placed glowing coals on the open third. Left it for half an hour to warm up before popping a couple of sweet potatoes and onions on the cooler side. Half an hour later I popped a few sausages on the hotter side to start them off and brown a little. Moved them to the indirect position to cook.
It may've been my first attempt and I may be biased, but really good. Also did a small rump steak and some chicken legs same method. All turned out far better than I have any right to expect.
The coals kept hot from 11 o'clock till 5 o'clock.
Beginner's luck I guess and as soon as I have guests I'll feck it up, but really pleased today.
The hours spent on youtube watching hillbillies and red necks paid off.

Thanks, Its made of Iroku and treated with Danish oil so its not going anywhere fast. May get a cover made up just to stop it getting water stains. Local hardwood specialist supplied the timbers and cut all the M & T's based on a simple design I put together on some graph paper. A Joiner who I have been using on some other jobs around the house put it all together for me whilst I made cups of Tea and came up with last minute design ideas. The sink is for Beer, just going to chuck a load of ice in it, lined underneath with Celotex so should help it stay cool. The doors underneath the sink are just dummies to hide some piping etc and we used offcuts and some spare handles from the kitchen for a bit of bling. It's mounted on casters and really easy to move about so can change the configuration to suit the occasion.Tuffer, I've nicked your photos as inspiration, very, very nice indeed.
I've a 57cm Weber one touch premium (in periwinkle blue!), and my new baby - a ProQ Ranger smoker. Bloody brilliant thing - almost wish I'd never bothered with the kettle it's so versatile.
