What is the secret to peeling an egg so that that skin thing simply makes the shell slip away? Why is it that after years of cooking to a competent standard, I still have eggs that take 10 minutes to peel while fight with pixel sized pieces of shell, all of which pull off a load of egg white, while standing in my kitchen swearing and stamping my feet.

And don't tell me they have to be fully cooled down, or fresh, as I have this issue in all circumstances, hot cold fresh and old.

Educate me. And make it good. I'm angry.

There is definitely a 'magic' temperature/period. It's maybe ten minutes after they are out of the pan, before they get cool enough for comfort. Cold seems worst.

Pan of cold water, tap the shell all over and leave to soak for a bit. Then peel. Smooth as a babies bum wink

Yes, or roll it on the work surface until a band of shattered shell encircles the egg, then slip it all off with the sub-shell membrane holding it all together!

Crack a piece of the shell on a table, peel that away and then use a teaspoon to get under the shell and clear the rest away. Easy.

We acquired some chickens a year or so ago and experienced shells sticking far more than we ever had. Supplier of the chickens said the eggs were too fresh.

Link above confirms this as an issue wink

I will try dropping them into boiling water straight from the fridge though.

I've had best success with this, I've had to "mass" (3 dozen eggs in one go) produce egg sandwiches for a street party my mum was organising - but found that the more cold water the better (the pan got warm as the eggs were taken from boiling water).

Older eggs are easier to peel than really fresh ones.

Or is it the other way round

Maybe the chickens that laid them were aliens..........Why can't things still be like in the old days ?!

Two or three drops of vinegar in the water when you boil them. The vinegar stops them cracking but also thins the shells. A light tap and then the shell comes off in 2 or 3 pieces.

Just rub half an apple on the shell as soon as they're out of the pan. Then one light tap on the pointy end and the whole shell will just fall away like dust.

The only method I've found to work reasonably consistently (probably still a smidge dependent on 'freshness' factor) is to dunk them straight into cold water (not tepid/lukewarm), and leave a few mins before using the rolling technique to crack the shell.
