Kitchen knife sharpener

Having invested in some reasonably good kitchen knives they need to be kept in good condition, just wondering if anybody can suggest the best way to keep them sharp ? Obviously not the £5 Sainsbury's sharpener, but what is the best way or tool to use ?

Very useful and quick particularly if you are not handy with a steel. Keep in mind you'll pay import tax on it plus Royal Mail's massively high handling fee. There are plenty of alternative about though.

I also have one of these. Does a good job on my Globals. Got it from somewhere in the UK though so no import tax to pay.

The type of knife will dictate the simplest and best sharpener. European knives are usually ground at 45 degrees, Oriental at 35. A minosharp is designed for 35 degree blades.

Thanks for the suggestions, the knives I have are European I think. I'll have to have a look at them again.

I can third this; puts an excellent edge on even a fairly cheap knife and the fine wheel once in a while keeps it there.

I have pretty much the same sharpener, does a good job. Remember that it just needs a couple of bach and forths not hard core sawing into it to get it sharp.

I was also recommended to strop the knife 10 times in each direction on newspaper every now and then to keep it all aligned.

Yes, and in pressure terms it needs little more than the weight of the knife (just a finger resting on top of the blade).
