Recommend me some Knives....

BIG, fk Off Shiny ones.....

Hello All,
Mama Nico was kindly asking what I wanted for Christmas, and it's occurred to me some decent knives might be a good idea.

I don't have much of an idea about them, so rather than heading to House of Fraser (other Department stores are available) blindly, I thought I'de ask on here...

The only items I've ever bought were the ones that came as part of what I have come to refer to as "My First Kitchen Set" Sounds like Fisher Price doesn't it, but in reality, that's overstating the quality - think a pizza cutter that literally folded on it first attempt to traverse a pizza and that's where I am...


The only requirement is quality - I don't care if that means I only get 2 decent knives...
Chopping and carving would be what I would see it/them being most used for - I'm not interested in cutting bread for example..

I've been on the internet, and I found - "Global" look re-assuringly expensive!

Are these the Cat's Pyjamas?

I'm far from a knife connoisseur but I am handy around the kitchen, a chef friend recommended Robert Welch Signature knives to the wife when she was looking for good quality but not busting the budget knives to buy me.

So far so good, I've got three; a Santoku 14cm, a 10cm paring knife and a 16cm Chef knife (I've had this one a year, the other two are new additions)

That lot total about £120 and I've been very pleased with them; they've all come from Steamer Trading, there is a branch local to us, I intend on adding more as and when.

Henckels Zwilling Pro is all the knife you could ever need at home. I've got 1 Global knife too, and I do love it.

Don't forget to factor in the cost of maintenance. Look at the minosharp 3 sharpener. I think it's the cheapest knife sharpener that won't feck your blades up. It's cheaper than a set of whetstones, and you'll get a much more conistent edge without learning to sharpen on a stone, which is NOT easy! You'll also need a good honing steel. The steel must be at least as hard as your choice of knife, so if in doubt go for a really hard one. If the hardness of the steel isn't mentioned, shop elsewhere.

I have a number of Globals (chef in a previous life) they are simply fantastic but are expensive, very expensive. I prefer them to anything else I have used however a friend who still cooks swears by Henckels.. So have a look, maybe get into a shop that stocks them and see what you prefer!

If you fancy globals then the amazon set above is good value for money.

Best advice is to go to a decent kitchen shop and try some, see what you like.

Had a global snap on us.

Went back to them and they claimed it had been in the dishwasher - which it hadn't.

They didn't replace it, we haven't bought any more.

Go and have a feel because that's the most important bit imo (I don't really like Global's handles).

Aldi were doing a similar set for £200 just before Christmas, it does make you wonder though; if they can sell a set of knives for around a third of the retail price, how much you are being ripped off in the first place, no matter how good the knives are.

I have no intention of rubbishing the brand; I've heard very favourable things but is Global the "trendy" knife brand of the moment?

Globals are possibly the worst overpriced pieces of st on the market, no balance, prone to snapping and an absolute bd to keep sharp. The amount of junior chefs I've seen waste money on Global knives over the year is unreal only to ditch them and buy various other brands.

I question any professional chef current or former that recommends Global. Just utter utter trash.

I started using Shun damascus steel Japanese knives towards the end of my career. Very nice in the hand, good balance and stay very sharp after lot's of cutting also look the part aswell.

Love them but fairly light which some may not like. Feel good in the hand and stay sharp (and look good!)

One of my old Sous chefs had a few of these which I used a couple of times. Nice grip and balance.

Global are very much a love/hate knife.
I can't stand the balance on them & they feel flimsy to me. The blades are un-reassuringly light! Try before you buy in my opinion.
Handle a 20cm Global chef's knife alongside something like a Sabatier Stellar 20cm one & see which you think feels better in the hand.
The Stellar is about half the price of a Global & I reckon you'll be very surprised....
If you want to impress dinner party guests though, go for Global or Wusthof.

Ok so as a former chef who recomended them earlier but also gave an alternative. Whats your question?

I love mine, think they are great, easy to keep sharp, hold an egde even after my wife as used them (shudder) balance well and never had one snap (I am not even sure how you get one to snap)

As also said earlier Knives are a personal preference, one mans Kitchen Devil is another mans Global!
