I cook a smoked gammon joint and make it into a ham this weekend....... use by date on the gammon 21st March..... it's still wrapped in it's sealed plastic wrapper and looks ok

Guess I'm ok really......

Smell it once open. You'll know from that if it's ok or not. My money is on it being ok.

That said, if you're concerned, chuck it and buy a new one. It's not that expensive....

Mehhh, salt is a natural preservative. I reckon it'll be fine if cooked properly. Boil, glaze and then roast.

It will be fine. Gammon is cured and lasts a very long time, especially if vacuum packed.
