Hi all,

Have just ordered myself an Uuni 2, delivery should be in March so gives me a couple of months to practice before the summer starts.

Planning to make big batches of dough and then freezing individual balls of dough to use as and when. What weight of dough would everyone recommend for a decent sized pizza? I actually prefer a slightly thicker base, rather than super thin, if that makes a difference.

Also, was also planning to use a good quality passata for my tomato sauce, but don’t want one that’s too smooth i.e. needs a bit of texture. Does anyone have a recommendation?

Not much help, but I think I have used a different recipe for the sauce every time I have made pizzas. Just start off with decent tomatoes like cirio, put them in a pan and make it up as you go along. If you stew it long enough the tomatoes break down and create a lovely textured sauce.

I wouldnt do a thick base on an Uuni, its very very hot, so cooks a pizza in about 90 seconds. If you try to do a thicker base it will burn on the outside and be stodgy on the inside

As for passata, don't use that, use chopped tomatos, buy something like http://www.cirio1856.co.uk/en/products/item/1/chop...

One of my old chefs built one. Really looked the part but he had to spend a long time getting it dried out and learning how to get it hot enough to cook in.

So much so I think he only used it a couple of times for family parties etc. Be a great focal point when entertaining.

I think I usually do about 200-250g.

I'd like to consult the Pistonheads collective wisdom on choice of pizza oven. And yes, I am too lazy to trawl back through all the previous pages.

One of my projects for this summer is to build (well, get a man in to build) me a chapstation in the garden - brickbuilt barbie, belfast sink to fill with ice for the beers/wine, gas ring and a wood fired pizza oven. Budget for the pizza oven is up to £1,000.

Which make would people recommend?

I got an ebay special, but its identical to this:

I got the 100Cm one and its been great!

Thanks for that. That's quite a structure! Positioning that would be an issue; i may have to go for one of the metal ones.

Thinking about getting some fire going in the pizza oven soon so that the dampness of winter can be eliminated and the oven season for the spring and summer. Anyone else with similar thoughts or do we think it a tad early yet?

Itching to make fire! Perhaps test out a few sunday roasts?

It does seem a little early but I don't see why not, depends how soon your planning to use it!


I fired up the pizza oven for a session on the 27th December, it was great!

You may be right Sidekick. I suspect there is more cold weather to come and therefore early fires may be less than effective in drying out the beast. May stick an old bar heater in there for a few hours to assist early preparation.

I moved into my little old cottage in August 2014, and had every intention of constructing a pizza oven on the back patio along with a brick barbecue and bar (built an example of the latter some years ago - before the divorce).. Anyhoo, I was going to do a one day cob course at a workshop here in Norfolk which was run by two ladies.... Just checked their website however they've now moved from Narferk down to Devon frown

I bought one of these from IKEA It comes with the slatted top, but you can but a separate S/S top http://www.ikea.com/gb/en/products/tables/outdoor-...

You can see it a bit to the back right of the pic, the Uuni sits against the fence where the slats are, works for me. The trolley has a cover so I can slip the Uuni in the lower shelf and put the cover over the trolley and keep it outdoors all year, plus with it being on wheels if it's a bit windy I can move it about to get a bit of shade from the wind.
