It's called the Pringa and you get them in Seville in Spain. I had them the once and have been mildly obsessed with them ever since. The recipe is as follow:
  • Stew pork belly, whole chorizo and morcilla (Spanish black pudding) in a slow cooker with tomatoes, wine, garlic, herbs etc. until the pork is done.
  • Form the pork belly meat into patties and lightly fry them in iberico pork fat until they go a little cripsy and browned.
  • Spread one half of a fresh bread roll with the inside of the chorizo and morcilla. Put the fried patty of pork on the other half.
  • Eat.


I'm currently in a country which doesn't serve pork. That sandwich and description has just made me very hungry for it.

Crispy streaky bacon,soft avocado pear sliced and mayo on brown. Lots of ground pepper.
Best hangover cure going.
2nd is a deli Mayo mix with strong finely chopped mature cheddar or equivalent,chopped jalapeños and chorizo.

There are many, many suggestions here that just won't work. Was going to 109% agree with this but with one caveat - it depends on the local "market". I have been surprised at how much bearded hipsters will pay for poncey-filling sandwiches when they're trying to impress the office totty... If they have the choice between Tuna&Mayo fir £1.50 or "Line caught dolphin-friendly bluefin tuna with organic mayo on a seeded wholewheat gluten-free bloomer with a drizzle of extra virgin olive oil" for £6 guess which ones they go for?

Simple menu with fewer things, but all done very well.

Here is the menu for one of my favourite sandwich shops, which has lines out of the door every day. Ok that is probably helped by it being owned by a winner of Top Chef who owns one of the best restaurants in the city, but my point still stands.

One of my favourites when I worked near a sandwich shop was their Thai chicken wrap.
