Hardly picking on I even qualified it by saying 'Whilst I accept its cheeky to say given I haven't entered' it was more an observation than anything. I appear to have started cottygate laugh

if its extended until the weekend then ill try and enter into the spirit of things too. smile

Beef Flank on the bone - purchased at local supplier for £ 2:16 ( 2 x pieces)



The raw meat.



Into the water bath - for an 18 hr cook at 70 degrees C.



The plated dish, ( after giving the meat a finish with a blow torch for flavour / colour)

Beef Flank with mash, carrots and broccoli. Served with a Port gravy.

Ok I realise I dropped the ball in using pre-made meatballs for my previous submission paperbag I pulled the entry as I didn't feel it was in the spirit of the competition.

I wasn't going to submit a replacement as I was only doing a chili this weekend. But I thought as I had resurrected the comp I should at least submit something. Rather than chop everything very fine I like to keep things chunky.

Well, I thought I'd go a bit off piste and trust others tastes. Followed the recipe religiously despite my reservations.

So here we go, boring entry i know but tasted amazing. Loads left for tomorrow too. And know I didn't create the bread from scratch but this is about beef.

My entry; roast sirloin with a tarragon, parsley and walnut crust on horseradish creme. Served with fondant potatoes and roast beetroot.

Plans for something fancy were halting by the arrival of a baby! So instead we have a stew to feed us for the next few days!

If a meat based recipe calls for fruit, sugar or chocolate I usually leave it out. At a push lemon with chicken and apple with pork but thats about it.

I took the recipe from Michel Roux Jnr who insisted on TV that "it worked".

Maybe if he cooked it LOL
