PH Cooking Competition - Chicken
Discussion
Mixed Paella with chicken, shell on prawns, shrimps, cod and clams.
Ingredients:-
After I took the photo I decided to add some hot red japeleno peppers. These worked wonderfully.
In the (large) pan:-
Plated:-
The plated photo doesn't tell the whole story because we decided that the clams wouldn't freeze very well. So we ate them all. They were absolutely delicious. They just had 60 seconds after they opened.

Here's my entry, it's a marriage made in heaven and for years has been one of my favourite ways to cook chicken, roasted with tarragon, butter and lemon.
Most of the ingredients.
Chicken ready to roast with tarragon butter under the skin, seasoned, lemon juice squeezed all over with half a lemon and some tarragon inside. Sweet potatoes are also ready to roast.
This is my plate and I like leg meat so a whole leg, half a breast and my favourite bit, the oysters. It's served with herbed roast sweet potatoes, savoy cabbage, carrots and a savoury bread and butter pudding which is something I've been wanting to try for a while, it was really good and I will do it again, way better than bread sauce. No gravy in this shot but it was delicious, lemony, tarragony and thick made with the pan juices, white wine and chicken stock.

Oh dear what an epic fail. Too funny, looked so good ended so bad.
I took the chicken out at this point to rest while I finished the vegetable rice, way too much liquid, couldn't save it.
The rice got overdone as there was too much liquid left in the pan. The chicken was cooked to perfection and the whole thing tasted great. I still have 1/2 a roasted chicken for sandwiches tomorrow.
In hindsight doing some plain boiled rice in a bowl with the roasted chicken on top and spooning over the roasted veg with some of the juices would have looked better.

Tickle has managed to find some very, very expensive, and exotic ingredients - Courgette !! Is that allowed ??
Luckily the courgette crisis had not hit my local farm shop, no doubt panic buying followed.I wasn't going to enter as I've little time on my hands at the moment as demonstrated by my dish. However, i love this "competition" as it's more a chance to get meal ideas!
So, something really simple as not much time. Stir fry.
Chicken marinated and then ..........Stuff.......
Cooked it. Not chance for pictures as it is such a fast process. End result....
Hope you all have a great weekend!

I have seen something that I would like to cook for this, but I can't find one of the ingredients. Would anyone object if I was to post the recipe and ask for alternative suggestions for the ingredient I can't find? It will not make a difference to the picture of the finished dish but I want it to taste good.
What ingredient cant you find This was my adaptation of a rabbit dish on TV last weekend. Chicken with braised fennel and chickpea mash. Absolutely delicious.
Chicken in the bath at 70 for 60 minutes, asparagus at 85 for 10.
Carrots cooked with sugar and anise, chickpeas blended with roast garlic and olive oil.
Lovely on a cold winter night.
