Bucket List in Brighton area

My young cousin has been told he has a few months to live. One of the things he asked is that his friends and family gather with him as often as possible before it's too late, visit some good restaurants, and get some serious eating in. He's not rich, far from it, so this hasn't been Fat Duck standards - we're talking gourmet burger type stuff so far.
Anyway, I'm due to go down there in a couple of weeks with my brother, who's flying in from abroad. We want to take the lad to a great restaurant in or around Brighton, something a bit special or different. I wondered if any of the Sussex base PH foodies had a recommendation. Quality is important, obviously, but it has to be said that we observe the old adage that quantity has a quality all of its own. And if we can combine the two, then all the better.

Sorry to hear your news - although it sounds like a good plan to get everyone together!
I eat in Brighton all the time and my two favourite restaurants are "The Set" (4 course set menu, quite imaginative, small portions but you can eat in the cafe and have as many courses as you like, quirky fun restaurant and great staff) and "64 Degrees" (very small restaurant, small courses again, chef off some Masterchef type programme on TV, great flavours and interesting concepts).
They're different from Gourmet burger type restaurants but they do meet your criteria of "different". As for quantity... well it's possible to work your way through nearly everything on the menu in these tapas style places, trust me I know!
If he likes Japanese food then Bincho Yakitori in Brighton is excellent, especially the crispy chicken skins!
Edited to add : "Plateau" in Brighton is also excellent, and their "meat platter" will absolutely combine your quality and quantity requirement. I've heard they're stopping doing it in the future so best to check if it's still on. I had proper meat sweats after an evening there!

I'd put 64 Degrees at the top of that list. They're always booked up so I'd recommend trying for a table now, maybe explaining your reasons may help.

ETA: if you can fit it in, ignore all of the gourmet/fancy burger places and go to Burger Brothers. It's tiny and really a takeaway place (couple of stools to sit on inside) but they are the absolute best burgers you'll eat! They mince their own steak and the whole thing is sublime! Maybe you'll have room for a lunch or something during your visit (definitely not a restaurant/eat in)

plateau is lovely, we had bloody mary and chips for a hungover lunch, and was great, went back for dinner that night and was superb. could well be a really nice treat without being too over the top?

Thanks for the recommendations everyone. We took him to Bincho Yakatori and he loved it. Got to say, that was one of the most enjoyable meals I've had in a long time. Their pork belly skewers grilled on hot coals was something damned special.
