Bombay onion is a generic term for an onion imported from India. They're pinkish. In between a white onion and red onion. Flavour is different to white or red onion (unsurprisingly). Probably a softer flavour.
Readily available from your South Asian grocery store. Slightly more expensive than white onion but per onion we are talking a few pence difference. Price can go up really high sometimes if there are supply problems.

I made this last night, but with a European onion rather than an Indian one! I didn't mash it down completely as I wanted texture rather than mush, and I could have added used more chilli, but it was tasty. I shall finish the remainder of it tonight with spicy salmon I think. I got a bit obsessed with doing BIR curry a while ago - its a bit of a faff but worth the effort.
I found this chaps channel quite good, you can almost cook realtime with him for some dishes which helps with process and timing.
